Im thinking about purchasing a set for myself and the question i had before i order, the kit im looking at doesnt seem to have a second hand just hour and minute. Can i mod a second hand in it or no?

the second hand post is still intact, so you can install a set of three hands instead. you can buy a set of extra three hands from them to change it.
but why not get the three-hand version? they do offer it, albeit in a different style.
I personally like the idea of modding the watch specifically for my taste. With this being my first one i kinda want to go all out. I saw some three hand ones but was not super thrilled with them.
